George W. Church, Sr. founded Church. After retiring from a career in the poultry industry as an incubator salesman, Church decided to start a business selling fried chicken at the age of 65, following an avant-garde fast food concept. He kept overhead low and focused on providing a high-quality product at a reasonable price, prepared for carryout, to appeal to a post-World War II population’s increasingly mobile lifestyle. In 1952, he launched a walk-up restaurant in San Antonio, Texas, that was little more than a stand across the street from the Alamo.

It was called “Church’s Fried Chicken to Go,” a fitting moniker given that the establishment served exclusively takeaway and sold only fried chicken. The cookers were unusually placed adjacent to the window, allowing customers to observe their food being produced. He did not add French fries and jalapenos to the menu until 1955. Church’s restaurant was a success, inspiring the establishment of three other locations in San Antonio. George Church, on the other hand, would not live to see his concept develop further. He died in 1956, and the operation was taken up by other family members.

When he assumed administration of the company in 1962, there were eight stores in San Antonio, and he was willing to concentrate on that little market for the time being. As a result, Church could expand beyond San Antonio while still maintaining a high standard of quality for their distinctive fried chicken. J. David Bamberger also partnered with Church in 1965 to create a second franchise company.

Bamberger grew up impoverished in Depression-era Ohio on a four-acre farm without running water or electricity. He paid his way through college by selling Kirby vacuum cleaners on his daily 40-mile drive, and he carried on with Kirby after graduating with a business administration degree. He began his career in 1951 in Tyler, Texas, and was later relocated to San Antonio. Bamberger was a gifted salesman and an even more energetic motivator of the sales force he oversaw. Bill Church was one of his salesmen.

As an investor and executive, Bamberger was instrumental in Church’s Fried Chicken’s national expansion, making it the first Texas-based fast-food chain to do so. His concept was to situate units in impoverished metropolitan districts, regions disregarded by established franchises such as Kentucky Fried Chicken. Regarding forging new territory in staff recruitment and education, Bamberger told Texas Monthly in a 2000 feature, “I convinced Bill that this was a natural progression from door-to-door vacuum cleaner sales. We’re going to take the first individuals laid off from a construction job inside and teach them how to clean their fingernails—no one wants their chicken given to them by someone who had to change his car battery that morning—how to tie a necktie, how to use deodorant, and say, ‘Thank you.'” In 1967, the first units opened in five additional Texas cities, and by 1968, the company was making $2.7 million in revenue from 17 restaurants. In 1968, the Church family sold its shares to Bamberger and Bill Church’s franchising company. A year later, to support the chain’s expansion, the business was incorporated as Church’s Fried Chicken and floated on the stock market.

By the end of the year, Church’s had expanded to over 100 locations in seven states. Church has made an attempt to catch up to segment leader Kentucky Fried Chicken. By the end of 1974, the network had expanded to 487 locations in 22 states, generating more than $100 million in revenue. However, CEO Bill Church and his executive vice-president, Bamberger, were no longer on the same page over how to continue growing the business. Bamberger resigned in 1974, alleging “philosophical differences,” but he retained his position as the company’s top shareholder, owning 1.2 million shares.

Roger A. Harvin, a childhood friend of Bill Church who was trained as a plant pathologist but entered the restaurant business in 1967 as assistant manager of three Texas Church’s locations, picked up the slack. He then worked his way up the corporate ladder, eventually becoming president in 1975, and taking on increased responsibilities when Bill Church stepped away from the corporation. Church resigned as chairman of the corporation in 1980, and Harvin was appointed in his place.

Church’s had a successful run in the 1970s, rising to become the second-largest chicken chain. In 1979, the company began worldwide expansion by launching a restaurant in Japan. Church’s also entered the burger industry during same decade, founding a franchise called G.W. Jrs. By 1982, the corporation had expanded to 62 locations across Texas. However, Church’s expansion stalled in the early 1980s. Additionally, there was discord at the highest levels of administration.

James Parker, executive vice-president of operations, resigned in early 1983. He was quickly succeeded by chief financial officer William Storm, who quit due to “philosophical differences with management,” according to a corporate spokesperson. Storm criticised Harvin’s reluctance to invest in new concepts or experimentation after he left the company. In the months following Storm’s departure, Harvin attempted to be more assertive. He increased his advertising spending and acquired Houston-based Ron’s Krispy Fried Chicken, a more affluent 74-unit chain that the business anticipated would establish it in more upscale, suburban locations, rather than Church’s usual inner-city market.

Additionally, Church’s introduced a new concept, Charro’s, to compete in the charbroiled, Mexican-style restaurant segment. By early November 1983, Harvin had resigned and Bamberger had returned to take his place. Bamberger, according to press sources, orchestrated Harvin’s removal and intervened to save his investment in Church’s.
